2. How to Make Banh Bot Loc
Step 1: Prepare the Ingredients
Rinse the pork belly and cut it into small, bite-sized cubes.
Marinate the pork with 1 teaspoon of seasoning powder and 1/2 teaspoon of pepper, then mix in finely chopped scallions for extra flavor.
Clean the shrimp and pat them dry. Next, marinate the shrimp with minced garlic, 1/2 teaspoon of pepper, 1 teaspoon of seasoning powder, and 1 teaspoon of salt for about 10 minutes.
Step 2: Make the Filling
Peel and lightly crush the garlic cloves, then fry them in hot oil until they turn golden brown. Add the marinated pork and continue to stir-fry over low heat for about 15 minutes.
After that, add the seasoned shrimp and continue to cook for another 10-15 minutes.
Step 3: Prepare the Dough
Mix 250 grams of tapioca starch with 1/4 teaspoon of salt, and create a well in the center.
Pour boiling water into the well and mix thoroughly. Then, add the remaining tapioca starch and stir vigorously until the dough is smooth and elastic.

Once the dough is smooth, take a small portion and roll it into a ball. Flatten it and place a small amount of the shrimp and pork filling in the center. Fold the dough over the filling and pinch the edges together to form a half-moon shape.
Step 5: Boil the Dumplings
Bring a pot of water to a rolling boil. Add a little cooking oil and salt to the water, then gently drop in the dumplings. They are ready when they float to the surface.
Remove the dumplings from the pot and immediately place them in a bowl of boiling water to cool down. Then, take them out and place them on a plate, brushing a little oil on each dumpling to prevent sticking.
Step 6: Prepare the Dipping Sauce
In a saucepan, combine 30ml of fish sauce, 30g of sugar, and 120ml of water. Cook over medium heat, stirring continuously, until the sugar is completely dissolved. Remove from heat and allow it to cool.
Once cooled, add 15ml of lime juice, 1 tablespoon of minced garlic, and 1 tablespoon of chopped chili to the sauce.
Step 7: Serve
