– 1kg of crab meat from crabs caught in the bay
– 400g of minced pork shoulder
– 6 dried shiitake mushrooms
– 2 wood ear mushrooms

– A handful of glass noodles
– 1 onion

– A handful of coriander
– 1/2 turnip
– 1/2 sweet potato

– Seasonings: fish sauce, seasoning powder, pepper, cooking oil
## How to Make Delicious Crab Spring Rolls
### Step 1: Prepare the Ingredients
Clean and steam or boil the bay crabs, then remove the meat. Choose pork shoulder with a bit of fat and mince or finely chop it. Clean and finely chop the shiitake mushrooms and wood ear mushrooms. Soak the glass noodles until they soften, then drain and cut them into small pieces. Peel and chop the turnip, carrot, and sweet potato into small pieces. Clean and chop the scallions and coriander. Use the egg yolks to bind the filling and set the whites aside to seal the spring rolls.
### Step 2: Mix the Filling
In a large bowl, combine all the filling ingredients from step 2 with 2-3 egg yolks and mix well. Add 1 tablespoon of cooking oil to prevent the filling from drying out, along with 1 teaspoon each of fish sauce, seasoning powder, and pepper. Mix thoroughly by hand to ensure the flavors are well distributed. Set the crab meat aside and add it on top when wrapping the spring rolls.
### Step 3: Wrap the Spring Rolls
Mix beer with a little water. Place a spring roll wrapper on a flat surface and brush it with the beer mixture to make it easier to wrap and to create a crispier texture when fried. Add another 1/4 wrapper on top to ensure the spring roll doesn’t break when fried. Place a tablespoon of filling in the center, shape it into a square, and then add the crab meat on top. Fold the wrapper into a square package and seal the edges with egg white. Repeat until all the filling is used.
### Step 4: Fry the Spring Rolls
To ensure crispiness, fry the spring rolls twice. First, heat oil in a pan to a medium temperature until it’s hot but not smoking. Test with the tip of a chopstick – if it bubbles gently, it’s ready. Fry the spring rolls once to seal the surface and cook them through, then remove and drain on paper towels.
