
Many people typically rely on salt to clean pig stomach, believing it’s sufficient. However, chefs argue that salt alone isn’t enough and can even make the stomach tough. For a thoroughly clean and odor-free result, combine two common kitchen ingredients: flour and rice vinegar.
How to Clean Pig Stomach Effectively
Ingredients:
– Pig stomach, flour.
– Rice vinegar.
Steps:
Pig stomach often comes with excess fat and mucus. Start by rinsing it under running water to remove some of the slime.
Place the stomach in a bowl, sprinkle flour over it, and gently massage for about 3 minutes. You’ll notice dirt and slime lifting away. Avoid scrubbing too hard to prevent tearing. Clean the outer surface for 2-3 minutes, then turn it inside out and repeat. Rinse thoroughly with clean water.
Instead of using salt again, add rice vinegar and massage for another 3 minutes, then rinse. Vinegar effectively neutralizes odors without toughening the stomach.
Finally, give it one more massage with a mixture of salt and vinegar, then rinse with water. Don’t remove all the external fat, as it adds a rich flavor when cooked.
Once clean, place the stomach in a pot with a pinch of salt, white wine, and a dash of oyster sauce. Boil over medium heat until it firms up and turns white, which takes just a few minutes. Avoid overcooking, as it will become tough. Slice it up for your desired dish.
If not using immediately, vacuum-seal and freeze. Simply thaw when ready to cook.
