2 How to Make Crispy Rolled Chicken
Step 1 Prepare the Ingredients
Soak the black fungus in warm water for 20 minutes to allow it to expand evenly. Afterward, give it a good rinse and drain the excess water. Meanwhile, wash the deboned chicken thighs, pat them dry with a paper towel, and set them aside.

Step 2 Roll the Chicken
Lay the chicken thighs on a cutting board, skin-side down. Sprinkle 1 teaspoon of seasoning and 1/4 teaspoon of ground pepper over the meat, ensuring an even coating. Then, spread the raw sausage on top of the chicken.
Arrange the black fungus horizontally on the chicken, and then carefully roll the chicken around the sausage, creating a tight cylinder. Repeat this process with the remaining ingredients to form another roll.

Prepare a pot of boiling water and place a steamer above it. Put the two rolls of chicken in the steamer and steam for approximately 45 minutes until the chicken is cooked through. Once done, carefully remove the rolls from the steamer and discard the silver paper.
