When processing dishes from pork ribs, most people would blanch the ingredients in boiling water to remove impurities, dirt, and odors. This method is not wrong, but it is not the best way.

Instead of blanching the pork ribs in boiling water, you should follow these steps.

Wash the pork ribs with rice water

When cooking rice, keep the leftover rice water. Put the ribs into a pot of rice water and soak for about 10 minutes. Note that the water must be enough to submerge the entire piece of ribs. Soaking the ribs in rice water will help remove dirt and excess blood from the ribs. After soaking, take the ribs out and rinse them with clean water.

Wash the pork ribs with alcohol and ginger
Apply crushed ginger evenly on the surface of the ribs for about 5 minutes. Then, put the entire piece of ribs into a bowl of diluted alcohol (either white alcohol or cooking alcohol can be used). Soak the ribs in diluted alcohol for a few minutes, then take them out and rinse them with clean water.

Wash the pork ribs with flour

Wash the pork ribs with clean water and cut them into bite-sized pieces. Put the pork ribs in a bowl and add 3-4 tablespoons of flour. Mix well with your hands so that the flour covers the entire piece of ribs. Mix for about 2 minutes, then rinse the ribs with clean water. Rinse until the water is clear.

Flour has the effect of absorbing excess secretions and dirty fat on the surface of the ribs.

After washing, you can cook the pork ribs according to your preference. With this method, there is no need to blanch in boiling water, and the soup or broth will be clear and odorless.

Tips for choosing delicious pork ribs

When buying pork ribs, you need to observe its color carefully. Fresh and delicious pork ribs will have a bright red color and a pale pink fat part. If the pork ribs are white or dark red, it may not be fresh. If you see ribs with these characteristics, it is best not to buy them.

Fresh pork ribs will have a natural slight aroma but not too strong. If the ribs have a strong smell, it may be old.

Use your two fingers to gently press on the pork ribs. If the meat on the ribs is firm, elastic, and bounces back, it means the ribs are fresh.
