Step 1: Prepare the ingredients

Peel and devein the shrimp, remove the back vein, rinse with salt and cooking wine, and let dry. Cut the young tofu into thick slices. Soak the miến in water. Trim the shiitake mushrooms, wash, and let dry. Wash the scallion leaves and chop finely.

In a bowl, mix 2 tablespoons of tomato sauce, 1 tablespoon of hoisin sauce, 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, sugar, and half a bowl of water until well combined.

Place the tofu slices in a bowl, add 1 beaten egg, and mix well to coat the tofu with the egg. Fry the tofu until golden on both sides and transfer to a plate.
