After that, you can transfer the chicken from the refrigerator compartment to the freezer compartment for storage.

When you need to use the chicken, you should transfer it from the freezer compartment to the refrigerator compartment about 1 day in advance to let it thaw slowly. When the chicken is completely thawed and the meat becomes tender, you can take it out for cooking. If you don’t wait for the chicken to thaw completely, the cooking time will be longer, and the chicken will become dry and tasteless.

Tips for Boiling Frozen Chicken

When placing the chicken in a pot, you should place it upside down so that the chicken thigh can be fully submerged in water. This part of the meat is thick and takes longer to cook, so if you place the chicken with the thigh facing upwards, the thigh will take longer to cook compared to other parts.

When boiling the chicken, make sure to fully cover the chicken with water so that all parts can cook evenly. It is better to use cold water for boiling. Gradually heating the water will prevent the chicken skin from cracking.

You can add some smashed ginger, dried shallots, or lemongrass to give the chicken a fragrant aroma. You can also add a little salt or seasoning to make the chicken more flavorful. If you want the chicken to have a beautiful yellow color, you can add a little turmeric powder to the boiling water. If you don’t have turmeric powder, you can grind fresh turmeric and mix it with the chicken fat (which has been rendered) to create a mixture. When boiling, keep the heat high initially to evenly distribute the heat throughout the pot, allowing the chicken to heat up evenly and cook faster. Once the water boils, reduce the heat and skim off any foam that floats to the surface. From the moment the water boils, you can boil the chicken for 5-10 minutes, depending on the size of the chicken. After that, turn off the heat and cover the pot, letting the chicken simmer for an additional 10-15 minutes until it is fully cooked. If the chicken is older or larger in size, you may need to increase the boiling time.

Once the chicken is cooked, remove it from the pot and soak it in a bowl of boiling water with some ice. This method helps to firm up the skin, make it crispier, and keep the meat firm, while also preventing the chicken from turning dark.
