Instructions for Delicious Fried Rice
Step 1
Place 3 cups of cooked rice in a large dish. Crack an egg into the rice and mix well, fluffing up the grains.
Combine 30g cornstarch and 60g crispy coating mix, then gradually sprinkle it over the rice, continuing to mix until the grains are evenly coated.
Step 2
Heat a pot of cooking oil over low heat. Once the oil is hot enough, add about a handful of the rice and stir until it turns slightly golden. Remove from the oil and drain excess. Repeat this process until all the rice is fried.
Step 3
Mix the rice with eggs
First, spread the rice out on a tray and fluff it up. Separate 5 egg yolks and mix them into the rice.
Step 4
Fry the rice
Heat a large pan over the stove. Add 5 tablespoons of cooking oil and 4 cloves of minced garlic. Fry until the garlic turns golden. Then, add the egg whites and cook until done.
Next, add the rice that you mixed with the egg yolks and stir to separate the grains.
Season with 2 teaspoons each of salt, sugar, and fish sauce, and mix well for about a minute. Finally, add about 1/2 cup of crispy rice grains, chopped scallions, and ground pepper to the pan and stir to combine.
With just a few simple steps, you’ve created delicious fried rice just like your favorite restaurant. The rice is hot, golden, and crispy—a true delight for the senses.
The rice grains are separate, golden, and crispy, creating a satisfying crunch when bitten into. Frying the rice with eggs adds a delicious richness and aroma to the dish.
Note: When preparing rice for frying, it’s crucial to follow a vital step to ensure the grains remain intact, firm, and non-sticky. First, rinse the rice thoroughly to reduce stickiness (without overdoing it, as this may wash away essential nutrients).
Second, after rinsing, let the rice drain and then transfer it to a pot. At this stage, add a tablespoon of vegetable oil and mix thoroughly. The oil will give the grains a glossy finish, enhancing both taste and appearance. Once the rice is cooked, spread it out on a large plate to cool completely before frying.
When frying the rice, use high heat and continuously stir, tossing the rice high to fluff it up. Keep frying until all the grains are separated and dry before adding the remaining ingredients.
