Preserving Enoki Mushrooms
Enoki mushrooms are quite resilient. They can be stored at 1-5°C for up to 45 days and will last 1-3 days at room temperature, depending on the weather conditions.
It’s important to line the storage container with absorbent paper and change it regularly to prevent moisture buildup.
Given their affordability and ease of purchase, there’s usually no need to stock up on Enoki mushrooms for extended periods.
Preserving Oyster Mushrooms
For oyster mushrooms, start by separating the stems. Blanch the mushrooms in boiling water with a pinch of salt for about 15 seconds, then drain and pat dry. Place them in a container, cover tightly, and store in the freezer. This method ensures they stay fresh for up to 30 days.
Preserving Straw Mushrooms
Straw mushrooms are a bit more challenging to preserve. Try placing them in vacuum-sealed bags before refrigerating, or blanch them for about 2 minutes in boiling water. After blanching, plunge them into cold water to stop the cooking process, then store them in the refrigerator along with the blanching water. This method keeps them fresh for 3-4 days.
Preserving Termite Mushrooms
Termite mushrooms have a delightful flavor and are quite rare, as they only grow where termites build their nests. To prolong their freshness, remove any buds, rotten parts, or crushed sections. If you wish to keep them fresh, avoid washing the mushrooms. Instead, use a clean knife to trim away any soiled parts and cut off damaged portions. Place them in a sealed container with a paper towel to absorb excess moisture and store them in the refrigerator. This method keeps them fresh for 3-5 days.
