Tips for Choosing Fresh and Delicious Eels
When purchasing eels, opt for those of moderate size and a well-proportioned body. The belly should have a yellowish tint, while the back exhibits a darker hue. These eels, often sourced from natural habitats like ponds, lakes, rivers, and streams, offer firmer and more flavorful meat.
Eels with darker bellies are typically farmed and may not possess the same firmness and taste as their wild counterparts.
Upon purchase, you can request the seller to gut and clean the eels, leaving you with minimal preparation once you get home.
Effective Methods to Remove Slime and Odor from Eels
– Using Salt
Place the eels in a plastic bag, add salt, and secure the bag tightly. Vigorously shake and rub the bag to ensure the salt coats the eels’ bodies evenly. Continue this process for about 2 minutes to eliminate the slime. Afterward, rinse the eels with clean water and let them drain.
– Using Hot Water
Immerse the eels in a container of hot water (not boiling). The high temperature will cause the eels to writhe and expel their slime. Subsequently, remove the eels, gut them, and give them a final rinse with salt water.
– Using Ice to Stun the Eels
You can use ice-cold water to immobilize the eels, preventing any movement. Place the eels in a sealed plastic bag and chill them in the refrigerator for about 2 hours before cleaning. Use a clean cloth to wipe away the slime from the eels’ bodies.
– Utilizing Lemon Juice
Lemon juice is excellent for breaking down the slime and neutralizing the odor. Squeeze lemon juice onto the eel’s meat, repeatedly rubbing it to remove the slime. Rinse the eels with clean water afterward and let them drain.
– Washing with Rice Water
Rice water contains starch and has a mild acidic property, making it effective for removing slime. Simply wash the eels thoroughly with rice water and then rinse them with clean water.
– Employing Ash
This method is suitable for rural households that still cook with straw or firewood. Place the eels in a basin and cover them with ash. Ensure even coverage, as the ash will absorb the external slime. Afterward, thoroughly rinse the eels with clean water to remove all traces of ash.
Note: To further reduce odor and slime, consider using warm water instead of cold water for rinsing the eels.
