Cheese Stuffed Bell Peppers
Ingredients:
– 3 large bell peppers
– 6 eggs
– 1 tomato
– 50 grams shiitake mushrooms
– 6 small cubes of cheddar cheese
– Salt, pepper
Instructions:
– Cut the bell peppers in half and remove the seeds. Dice the tomato and shiitake mushrooms.
– Beat the eggs in a small bowl and set aside.
– Stuff each bell pepper half with tomato, shiitake mushrooms, and cheddar cheese. Pour a little beaten egg on top. Finally, season with salt and pepper to taste.
– Place in an oil-free air fryer at 200°C for 15 minutes.

Ingredients:
– 2 eggs
– 150 grams shiitake mushrooms
– Spring onions
– Salt, ground pepper
Instructions:
– Remove the roots of shiitake mushrooms, add a teaspoon of salt to a bowl of water, soak the shiitake mushrooms for 15 minutes, rinse with water 2-3 times. Finely chop the spring onions.
– Crack 2 eggs into a bowl, then add chopped spring onions, salt, and ground pepper to taste, and mix well.
– Separate the stems from the shiitake mushrooms and squeeze out excess water.
– Heat 10 ml of olive oil in a pan, spread the shiitake mushrooms evenly in the pan.
