– Eggplant: 2 long ones

– Chili, ginger, shallots, garlic, scallions

– Cornstarch: ½ teaspoon

– Seasonings: 2 tablespoons of balsamic vinegar, 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, cooking oil, cooking wine, chili sauce

2. How to make steamed eggplant dish

Step 1: Prepare the ingredients

– After buying the eggplants, wash them and cut them into small, bite-size pieces and then split them into long segments. Then, soak the eggplants in water for about 5 minutes to prevent them from turning brown, and then remove and drain the water.

– Peel and wash the shallots, garlic, and then chop them finely.

– Wash and remove the stems of the chili peppers, then chop them finely.

– Peel and wash the ginger, then chop it finely.

– Remove any damaged or withered leaves from the scallions, then wash them with clean water and cut them into small pieces.

Step 2: Prepare the sauce

– Take a small bowl, add 2 tablespoons of balsamic vinegar, 1 tablespoon of sugar, 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, a little chopped chili, and half a bowl of boiling water.

– Stir the mixture well with a spoon or chopsticks to blend the seasonings together.

Step 3: Steam the eggplants

– Place a pan on the stove, add a little cooking oil and then stir-fry the eggplants over medium heat for about 4 minutes. This step will help reduce oil splatter when frying.

– Continue frying until the white flesh of the eggplants turns yellow, then remove and drain.

– Pour out some oil from the pan, then add chili sauce, a little chopped chili, and 1 tablespoon of cooking wine to stir-fry until fragrant.

– Add garlic, shallots, and ginger to stir-fry evenly, then pour in the prepared sauce and simmer for about half a minute.

– Wait until the sauce in the pan thickens slightly, then quickly stir in the fried eggplants until they absorb the sauce.

– Sprinkle with finely chopped scallions, stir well, turn off the heat, and serve.
