Tips for choosing fresh and tasty fish

First and foremost, to make a delicious braised fish dish, you need to choose the freshest live fish. You should select fish that are swimming vigorously, have clear eyes, a pink hue, shiny scales, and unblemished skin.

In addition, when buying fish, you should choose fresh and tasty ones that have firm and elastic bodies, and avoid choosing fish that are already dead and flaccid.

When looking at the fish scales, they should be bright and metallic, not dull. The scales should be tightly layered, like roof tiles. Avoid any fish that is missing scales, as it indicates that they have been dead for a long time and are no longer fresh. If the fish is a scaleless variety, make sure the skin is shiny and wet, without any color change or dullness.

How to perfectly braise the fish

Step 1:

– Heat a pot on the stove with 1 tablespoon of cooking oil, 1 tablespoon of sugar, and cook over low heat until the sugar turns caramel color, then add the minced garlic and stir-fry until fragrant. After that, add the fish sauce and bring to a boil.

– Turn off the heat and place the fish in the pot, then pour the delicious fish sauce over the fish (if you prefer a milder taste, reduce the fish sauce and add some tea water instead. Tea water helps eliminate the fishy smell and make the fish firmer).

– Then add 1 tablespoon of seasoning powder, 1 teaspoon of ground pepper, 2 tablespoons of sugar, 2 tablespoons of honey, and whole chili peppers. Peel and crush the shallots and spread them over the fish.

Step 2:

– Turn on the heat and braise the fish over high heat until the sauce starts to reduce. Then turn off the heat and let the fish rest for about 2-3 hours. After that, braise the fish over low heat until the sauce thickens.

If using a pressure cooker, cook under the pressure mode for 30 minutes, then open the lid, switch to the rice cooking mode, and cook until the liquid evaporates, then turn off the heat.

Notes for braising fish to make it
