– Cornstarch: 1 tablespoon
– Seasonings: 2 tablespoons cooking wine, salt, sugar, 1 tablespoon oyster sauce

Step 1: Prepare the ingredients
– After purchasing the chicken gizzards, clean them thoroughly. Then squeeze them with salt to reduce the characteristic fishy smell and rinse with clean water several times. Cut the chicken gizzards into bite-sized pieces with a knife.
– Peel the garlic, rinse and finely chop.
– Peel the ginger, rinse with clean water and then crush and finely chop.
– Wash the chili peppers, cut them in half and remove the seeds. Then, use the knife to diagonally slice them into bite-sized pieces.
Step 2: Marinate the chicken gizzards
– Take a small bowl, then add the chicken gizzard pieces, chopped garlic, crushed ginger, 1 tablespoon salt, 1 tablespoon oyster sauce, and cooking wine.

Step 3: Stir-fry the chicken gizzard with lotus stem
