Crispy and Fragrant Salted Fried Chicken Recipe – A Secret Method to Tender and Sweet Meat, Even Picky Eaters Will Love

Fried fish sauce chicken is a flavorful and enticing dish for children. The dish has a crispy and fragrant outer shell, with tender and sweet meat inside. It has a rich fish sauce flavor that makes it appealing and perfect for meals. Especially on cold days, fried fish sauce chicken will be extremely attractive in your family meals, especially for picky eaters. It is a wonderful dish.



4 chicken wings (chicken wings are tastier than other parts, but you can still apply this recipe to other chicken meat parts you have)

1 clove of garlic

Seasoning: sugar, fish sauce, cooking oil

Lime leaves, lemongrass



Step 1: Preparing the ingredients

When you bring the chicken home, you need to wash it clean. If you use the chicken meat in the breast, wings, you should cut it into bite-sized pieces, not too small or it will become dry. Remember to use ginger wine and salt to rub and wash the chicken to remove any unpleasant smell. Choose tender chicken for delicious fish sauce chicken, avoid tough chicken like roosters, old chickens, or corn-fed chickens as they will make the dish dry and less tasty.

Peel and finely chop the garlic, then mix it well with fish sauce and sugar in a 1:1 ratio.

Crush the lemongrass and slice the lime leaves into medium-sized pieces.

Step 2: Pre-boil the chicken wings

You can pre-boil the chicken to cook it faster. Usually, when you use whole chicken wings or thighs, you should pre-boil them. But if you have already cut the chicken into bite-sized pieces, there is no need to pre-boil. Just pre-boil it for about 2 minutes. Boil water, then put the chicken into it and take it out immediately, avoiding putting it in cold water, which will make the chicken lose its flavor. Boil it briefly.

Step 3: Fry the chicken

Dry the pan and add cooking oil, then heat it up before putting the chicken in to fry until it turns golden. Once the chicken is evenly golden, remove it from the pan. During the frying process, you can add lemongrass to create a fragrant aroma and remove the lemongrass strands together with the chicken for crispy lemongrass strands (if you don’t like lemongrass flavor, you can skip this step)


Step 4: Pour fish sauce mixture over the chicken wings

Use the same pan used to fry the chicken, remove excess oil. Add garlic and stir-fry until fragrant, then add the fried chicken and lemongrass from the previous step. Pour the prepared fish sauce mixture over the chicken, stir well to infuse the seasoning into the chicken, the sauce thickens. Add lime leaves (if you like the taste of lime leaves). The sauce thickens and you have a delicious fried fish sauce chicken.


Many families like to add a few slices of onion and bell pepper, you can slice them and stir-fry together.

To make delicious fish sauce chicken, pay attention to the frying step to avoid it becoming dry. Fry it quickly for a crispy outer shell and a moist inner layer. If the chicken wings or thighs are large, you can use a syringe to inject more sauce into them for a richer and more flavorful taste.
