Ingredients:
500g chicken feet
2 onions
1 garlic clove
5 lemongrass stalks
Seasonings: oyster sauce, fish sauce, satay, chili sauce, shrimp salt, sugar, honey, white wine

Preparation:
When buying chicken feet, choose large and plump ones. Do not use native chicken feet as they are tough and contain a lot of bones that can make the dish dry and not tasty. When selecting, choose fresh chicken feet instead of frozen ones. Squeeze the chicken feet with salt and ginger wine to clean them and remove the unpleasant smell. Break the nails and split the chicken feet in half. You can remove the bones or leave them whole, depending on your preference.
Marinade: Finely chop the lemongrass, onion, and garlic, then mix them with 1 tablespoon of oyster sauce, 1 teaspoon of good fish sauce, 1 tablespoon of satay, and 1 tablespoon of chili sauce. Add 2 teaspoons of sugar and 1 tablespoon of honey. If you like, you can add 1 teaspoon of shrimp salt for a special flavor. Then, add 1 teaspoon of cashew powder to create a beautiful color. To prevent the chicken feet from drying out during marinating, you should add a spoonful of vegetable oil. If you have a blender, blend the ingredients together or grind them to create a uniform mixture. Some people use five-spice powder, but many people do not like its taste, so you can use only the cashew powder without the five-spice powder.
Marinating:
Put the marinade mixture on the chicken feet. Wear gloves and squeeze to allow the seasoning to penetrate the chicken feet better. If you can, prepare in advance and wrap tightly to refrigerate overnight. The next day, the grilled chicken feet will be more flavorful. If you use it on the same day, let it marinate for 3-4 hours for the seasoning to absorb evenly.
Preheat the air fryer to 200°C for 5 minutes. Put the marinated chicken feet in and grill them, you can line the tray with silver foil.
