Soak ginger and scallions in hot water to make ginger scallion water. Cut pineapple into small cubes and soak in a diluted saltwater solution for about 30 minutes, then drain. Cut bell peppers into small pieces. Thinly slice pork and place it in a large bowl. Add salt and ginger scallion water. Mix well for the pork to fully absorb the flavors. Let it marinate for 10 minutes.

Beat the egg in a bowl, place cornstarch on a plate. Dip the pork into the beaten egg, then coat it with cornstarch. Repeat this step until all the pork is coated. Heat cooking oil in a pan. Leave about 1 tablespoon (15ml) of oil in the pan, then add minced garlic, ginger, bell peppers, and the white part of the scallions. Stir-fry until fragrant and tender. Add pineapple and the sweet and sour sauce, bring to a boil. Stir-fry until the pork is well coated with the sauce. Transfer to a plate and enjoy.
