How to choose good squid
First of all, if you want to have delicious steamed, stir-fried or boiled squid, you also need to have fresh and tasty squid. Whether it’s tube squid or egg squid, the squid itself needs to be fresh and not left for a long time.
To buy good squid, you should check the elasticity of the squid by using your hand to touch it. If you feel that it has good elasticity, then it is the kind of squid that is worth buying. If you find that the squid has poor elasticity when touched, and especially if it has a characteristic smell of spoiled seafood when left for a long time, then you should stay away from it.

How to cook delicious and crispy squid
Step 1: Preparing the ingredients
After buying the squid, remove the tightly attached tentacles on the body of the squid, then remove the squid pouch and its digestive system. During the process of removing the squid pouch, be careful not to break it, as it will make the squid more pungent.
Use your hand to forcefully pull out the white spinal bone on the squid’s back, then soak the squid in diluted white wine to remove the pungent smell, and then rinse it with clean water.
The squid’s ink sac is not edible, so use scissors to cut it off or use your hand to squeeze it near the eyes.
Use a banana to rub around the body to clean the squid again, then cut it into round pieces that are bite-sized.
Step 2: Boiling the squid
Boil a pot of water. When the water boils, slowly add the squid to start boiling it. Boil the squid until the body becomes firm and completely white, then quickly remove it and soak it in a bowl of ice water. This is a very useful tip to make the squid crispy when eating.
Boil another pot of water with a little diluted salt, then dip the prepared scallions into it and cut them into long pieces.
Step 3: Making the dipping sauce
In order to enjoy the most delicious and crispy boiled squid, the dipping sauce is indispensable. To make the dipping sauce for the dish, you just need to combine sugar, chili powder, white vinegar, and white soy sauce according to your taste. When enjoying it, add some scallions and pour the dipping sauce evenly on the squid.
