1. Ingredients for mixed clam with roasted rice

– Clams: 2kg

– Vietnamese coriander, Vietnamese balm: 1 bunch each

– Roasted rice: ½ small bowl of rice for eating

– Garlic, chili, lemongrass, ginger

– Spices: ½ teaspoon ground pepper, broth powder, fish sauce, sugar, lime juice


2. How to make mixed clam with roasted rice

Step 1: Prepare the ingredients

– After buying the clams, rinse them thoroughly, then soak them with rice washing water for 1 hour to remove all the sand. Then rinse the clams again with clean water,

– Peeling garlic, clean and mince.

– Peel and clean ginger, peel the old layer of lemongrass then wash and slice thinly.

– Remove spoiled leaves of Vietnamese coriander and Vietnamese balm. Rinse with water and chop finely.

– Rinse the chili, remove the stem, and mince.

Step 2: Steam the clams

– Place a pot of water on the stove, then add clams, lemongrass, and ginger, then pour water into the steamer.

– Wait until the clams are cooked, then open the shells.

– After the clams have cooled, you need to separate the shells and take the meat. You can use a small spoon to keep the clam meat intact.


Step 3: Marinate the clam meat

– Put the separated clam meat into a large bowl, then add chili, garlic, broth powder, ground pepper… and mix well.

– Marinate for about 15 minutes for the ingredients to absorb the spices.

Step 4: Make the dipping sauce

– Take a small bowl, add 1 spoon of sugar, 1 spoon of fish sauce, ½ spoon of lime juice, and 1 spoon of filtered water.

– Stir well with chopsticks or a spoon until the ingredients are well blended, then add a little minced garlic and chili.

Step 5: Mix with roasted rice

– Next, add Vietnamese coriander, Vietnamese balm, and finely chopped chili to the mixing bowl.

– Sprinkle the prepared roasted rice and mix until the clam meat is covered with a thin layer of roasted rice, then you can arrange the dish on a plate and enjoy.


After finishing the mixed clam with roasted rice, you can enjoy it with herbs or use rice paper to wrap it. When eating, you will feel the chewy, sweet clam meat combined with the delicious sweet and sour dipping sauce.

– To quickly remove sand from the clams, you can soak them in a soaked water mixture of cold water and boiling water at a ratio of 5:1 (including 5 bowls of cold water and 1 bowl of boiling water). The water should cover the clams. Then add a little salt and some slices of chili.
