Choosing Good Chicken
When deciding to buy chicken, it is best to choose local chicken. In the case of buying live chicken, pay attention to selecting healthy ones. To identify healthy chickens, you can check for signs such as shiny feathers, bright feathers, firm bodies, large tongues, and bright eyes.
For processed local chicken, look for a chicken with natural light yellow skin and even thin skin all over the body. When checking the chicken meat, consider its firmness, small floating bones, and avoid excessive accumulation of yellow fat in the neck and thighs.
Avoid choosing industrially processed boiled chicken, as they are often soft, not crispy, and lack flavor. To ensure food quality, prioritize choosing local chicken or free-range chicken.
Cooking Chicken

Boiling Chicken with Hot Water
To start the chicken boiling process, the first step is to clean the chicken by washing off the feathers and removing some internal organs. Then, you add water to the pot and add minced onion leaves and small ginger. Onion leaves and ginger not only help eliminate the strong odor of the chicken but also create a pleasant fragrance.
When the water is boiling and has a fragrant smell of onions and ginger, you put the chicken into the pot. Note that releasing the chicken from cold water or waiting until the water boils before releasing is not correct. Boiling chicken with hot water can cause the chicken skin to suddenly shrink and crack, resulting in an unattractive appearance.
After putting the chicken in hot water, it is important to dip it in and out about 3 times. You need to hold the chicken’s neck, lift it out of the water, wait for 30 seconds, and then release it back in, repeat this motion 3 times. This trick helps the chicken skin from cracking, and the chicken meat becomes more delicious.
Next, cover the pot with a lid and simmer for an additional 30 minutes. When the chicken is cooked, put it in cold water to make the skin crispier and have a bright color, adding more appeal to the dish.
If you want to add spices to the chicken, avoid using too many spices. The deliciousness of chicken mainly comes from its natural flavor. Adding a few slices of ginger and a bunch of shallots is enough to eliminate the fishy smell and enhance the flavor of the chicken.
Finally, remember to simmer the chicken for about 20-30 minutes, as chicken meat is very tender, and boiling for too long can make it lose its deliciousness and become tough and dry. Do not simmer the chicken on low heat for too long, just boil it for the right amount of time, and you will have a fragrant, delicious, and eye-catching chicken dish.
