– After buying, perilla leaves will be washed and soaked in diluted saltwater for about 10 minutes to remove all dust and insect eggs.

– Peel and wash the garlic, then mince it.

– Remove damaged leaves and withered leaves of scallion, then finely chop them.

– Wash and mince the dried chili.

Step 2: Blanch the perilla leaves

– Place a pot of water on the stove and bring it to a boil. Then, put the perilla leaves into the boiling water and blanch them for about 1 minute.

– Add a little salt, cornstarch, five-spice powder to the mashed potatoes and mix well to let the potatoes absorb the spices.

Step 3: Stir-fry the potatoes with perilla leaves

– Place a pan on the stove, heat the cooking oil and then add the mashed potatoes with spices and stir until the surface of the potatoes turns brown.

– Add 2 teaspoons of soy sauce and continue stirring until the potatoes release a fragrant smell, then add finely chopped perilla leaves and stir again.
