Normally, many people have the habit of soaking dried mushrooms like shiitake, wood ear or black fungus in hot water to speed up the process. However, this is a mistake that makes the mushrooms sticky, soft, and unappetizing.

Here is a quick and delicious way to rehydrate dried mushrooms without losing their flavor. It only takes 2 minutes for the mushrooms to plump up, become firm, and clean:

How to rehydrate dried shiitake mushrooms

Ingredients:

  • Warm water
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 sealed container
  • Put the dried mushrooms in the sealed container.
  • Pour warm water (about 50 degrees Celsius) over the mushrooms, add 1 tablespoon of sugar and 1 tablespoon of cornstarch into the container. Close the lid tightly and shake vigorously for about 2-3 minutes.
  • After opening the container, the dried mushrooms will be fully rehydrated, plump, and firm without falling apart.
  • During the shaking process, the sugar and cornstarch will remove any impurities on the surface of the mushrooms. In addition, the sugar helps the mushrooms to rehydrate quickly and retains their nutrients, making them tender and more flavorful.
  • Take out the mushrooms and rinse them with clean water. Now, you can apply this tip to other dried ingredients such as wood ear or snow fungus.

Remember to use this convenient and quick method to make your cooking easier and more enjoyable.
