Egg Rolls with Cucumber and Carrot

Ingredients

– All-purpose flour: 2 tablespoons

– Cucumber: half

– Carrot: half

Eggs: 3

Instructions

– Rinse the cucumber and finely dice it, leaving some aside. Put the rest into a blender and blend until smooth, then transfer to a bowl. Add the egg whites and mix well.

– Add the flour and mix until the mixture becomes creamy.

– Finely dice the remaining cucumber. Rinse the carrot and dice it like the cucumber.

– Heat some cooking oil in a pan, then add the diced cucumber and carrot to stir-fry. Season with half a tablespoon of oyster sauce, stir-fry evenly, then set aside.

– Beat the egg yolks evenly.

– Grease another pan with cooking oil, then pour the cucumber mixture into the pan, spreading it evenly to cover the pan. Cook slowly over medium-low heat.

– Once the mixture thickens, spoon the stir-fried cucumber and carrot on top. Slowly roll up the batter and push it to one corner of the pan. Then pour the beaten egg yolks evenly. Cook until the eggs set, then continue rolling the previously rolled batter along with the egg yolks, gradually moving towards the end of the pan. Cook for a while until the eggs and batter are fully cooked, then remove from the pan.

– Cut the fried egg rolls with cucumber and carrot into bite-sized pieces.
