2. Instructions for making roasted eggplant with garlic and chili
Step 1: Prepare the ingredients
– After buying, wash the eggplant and remove the stalk, then drain the water.
– Peel and mince the garlic.
– Wash and mince the red bell pepper.
– Remove any damaged or wilted leaves of the green onion, then wash and chop it.
– Rinse the red bell pepper, remove the stem, and mince it.
Step 2: Make the sauce
– Place a pan on the heat, add cooking oil and heat it up, then add minced garlic and chili to stir-fry until fragrant.
– Add 2 tablespoons of white sugar, 2 tablespoons of soy sauce, and ½ tablespoon of salt, then stir-fry evenly to blend the ingredients.
Step 3: Roast the eggplant
– Brush a thin layer of cooking oil on the surface of the eggplant, place it on a baking tray lined with silver paper, and put it in the oven at a temperature of 190 degrees Celsius for 20 minutes.
– Then, take out the roasted eggplant and cut it in half. Spread the prepared sauce evenly on the eggplant pieces and put them back in the oven for about 10 minutes.
