Step 1: Prepare the ingredients
– After buying fish, it will be cleaned, remove the organs, gills, and black membranes in the abdomen, then rinse with water. Then cut the fish into bite-sized pieces.
– Remove damaged leaves, withered leaves, or old stems of thì là, then rinse with water and cut into bite-sized pieces.
– Peel the fresh ginger, wash it and slice it thinly.
Step 2: Marinate the fish
– Take a small bowl, add the prepared fish pieces, then add a little cooking wine, salt…
– Use cooking utensils such as spoons, chopsticks… to mix well and marinate the fish for about 10 minutes for the spices to be absorbed.
Step 3: Fry the fish
– Place a pan on the stove, add a little cooking oil and heat it up. Then add finely chopped ginger and a few grains of salt.
– Subsequently, put each clean piece of fish into the pan and fry until golden on both sides. During frying, it is best to adjust the heat to low so that the fish can cook evenly and not burn.
– Wait until the fish is cooked and golden on both sides, then add the thì là. To avoid breaking the fish, you should not use chopsticks to turn it vigorously.
– When the fish is cooked, you can transfer it to a plate and garnish with some thì là leaves on top.
