  • 250ml water
  • Food coloring of your choice (pandanus, roselle, or strawberry syrup, etc.)

Step 1 Mix the Starch

Divide the starch into three portions and place them into three separate bowls. Add water to each bowl and stir until the starch is fully dissolved. Then, add a few drops of food coloring to each bowl and stir well. Let the mixture rest for about 30 minutes.

After 30 minutes, strain the colored starch mixtures through a sieve a few times. Then, pour a small amount of the strained mixture into a pot and turn the heat to high. Stir continuously until the mixture thickens and cooks through, then lower the heat.

Repeat this process, adding a little of the strained mixture at a time until all of it is cooked and clear.

Step 3 Shape the Jelly

Pour the cooked arrowroot mixture onto a tapioca starch tray. Use your hands or a rolling pin to flatten the mixture into a thin layer and let it cool down.

Finally, cut the arrowroot jelly into small cubes.
