Step 1: Prepare the spare ribs

First, wash the spare ribs with salted water to remove any unpleasant odors. Then, place them in a bowl and marinate with 2 tablespoons of seasoning powder and 2 tablespoons of cooking oil. Mix well.

Step 2: Prepare the other ingredients

Remove any yellow or wilted leaves from the coriander and spring onions, and cut them into 1 cm long segments. Peel and slice the shallots thinly. Wash the tomatoes and cut them into wedges. Peel and core the pineapple, then cut it into small, 0.5 cm thick slices.

Step 3: Cook the spare ribs

Add 500ml of water to a pot and place it on the stove. Put the marinated spare ribs into the pot. Once the water boils, skim off the foam to clarify the broth. Reduce the heat and simmer the ribs for 10-15 minutes.

Step 4: Make the sour soup

Heat a pan with 200ml of cooking oil. Add the sliced shallots and spring onion roots, stirring frequently. After 2 minutes, add the pineapple and tomatoes, and continue stirring for another 2 minutes before turning off the heat. Pour this mixture into the pot with the spare ribs, and stir well. Add 1 tablespoon of salt, 2 tablespoons of sugar, 2 tablespoons of seasoning powder, and 1 tablespoon of fish sauce. Stir well and taste for seasoning. Finally, add the chopped spring onions and coriander.

Step 5: Serve

In a bowl, place some beansprouts and pour the sour soup over them. The tangy flavors of pineapple and tomato, combined with the sweet aroma of the spare ribs, create a delicious blend that’s hard to resist.
