Crispy Thai-Style Pork Belly
Ingredients for the pork belly: 1 kg pork belly; 1 tablespoon of salt; 2 tablespoons of soy sauce; 1 tablespoon of vinegar; 1 teaspoon of refined salt.
Ingredients for the dipping sauce: Lime wedges; ground roasted rice; chili powder; fish sauce; tamarind juice; sugar; lime leaves; chopped coriander and scallions; and oil for frying.
Preparation:
– Step 1: Rinse the pork belly and place it in a pot with water, salt, and soy sauce. Bring the water to a boil and cook the meat until it is slightly cooked on the outside. Remove the meat and drain the water.
– Step 2: Use paper towels to dry the surface of the meat. Poke holes in the skin with a fork and rub vinegar and refined salt all over.
– Step 3: Air-dry the meat in the sun or in a well-ventilated area for about an hour.
– Step 4: Heat oil in a large pan, ensuring there is enough to submerge the meat. To prevent the meat from sticking to the bottom of the pan, you can place a small rack at the bottom. Once the oil is hot, carefully place the meat in and fry until both sides are golden brown and the skin is crispy. Remember to flip the meat to ensure even cooking. Once done, remove from the oil and drain on paper towels before cutting into bite-sized pieces.
– Step 5: Prepare the dipping sauce by mixing all the ingredients in a bowl.
Crispy Fried Shrimp
Ingredients: 8 large shrimp; 1 egg; 1 packet of panko breadcrumbs; 3 tablespoons of flour; pepper, seasoning, and oil for frying.
Preparation:
– Step 1: Clean and devein the shrimp, leaving the tails intact. Season the shrimp with salt and pepper and let them marinate for about 15 minutes.
– Step 2: In a bowl, beat the egg and mix it with the flour until you have a smooth batter. You can use a strainer to avoid lumps.
– Step 3: Spread the panko breadcrumbs on a plate. Hold the shrimp by the tail and dip it into the egg mixture, then coat it evenly with the breadcrumbs. Place the shrimp on a separate plate and lightly sprinkle or roll it in the breadcrumbs to create a thick, crispy coating.
– Step 4: Heat oil in a pan and fry the shrimp until they turn golden brown. Remove from the oil and drain on paper towels to reduce the greasiness of the dish.
