A dish that seems easy to make, but in reality, it takes a skilled hand to get it just right. The order in which you add the eggs and tomatoes, as well as the seasoning, is crucial. One wrong move and the dish loses its delicious flavor.

I’ve made scrambled eggs with tomatoes countless times and have narrowed it down to four essential rules. Follow these, and you’re guaranteed a delicious dish that will have everyone asking for more.

1. Always peel the tomatoes before chopping them. This helps the tomatoes soften faster and gives a more intense flavor when cooked.

2. The order matters: cook the eggs first, then add the tomatoes. Doing it the other way around can make the eggs smell unpleasant.

3. Sugar is a must. It enhances the freshness and aroma of the eggs.

4. Go easy on the seasoning. Tomatoes already pack a punch of flavor, so adding too much seasoning will take away from their natural freshness.

In addition to these tips, be sure to follow the step-by-step instructions below for a perfect dish every time.

Here’s my recipe for delicious scrambled eggs with tomatoes.

HOW TO MAKE DELICIOUS SCRAMBLED EGGS WITH TOMATOES

Ingredients

– Finely chopped scallions

– 4 eggs

– 2 tomatoes

– Salt

– Sugar

– Cooking wine

– Cooking oil

Instructions

1. Wash the tomatoes and blanch them in boiling water. Peel and chop them into small cubes.

2. In a bowl, beat the eggs with a little cooking wine, salt, and water.

3. Heat some oil in a pan and pour in the beaten eggs. Scramble the eggs until they are soft, then set them aside.

4. In the same pan, heat a little more oil and sauté the scallions. Add the chopped tomatoes and cook until softened. Then, add the scrambled eggs back into the pan.

Season to taste, adding a half teaspoon of sugar at the end. Mix well and turn off the heat.

5. Serve the scrambled eggs with tomatoes on a plate, garnished with fresh scallions, while still hot.

Notes

When making this dish, keep these additional points in mind:

– There isn’t a significant difference in nutrition between free-range and industrial eggs. However, in my experience, free-range eggs tend to have a better aroma and are less likely to smell unpleasant. Always opt for fresh eggs.

– Don’t use too much oil when cooking. You can also use lard for a more flavorful dish.
