Ingredients
500g fresh fish.
1 bunch of Chinese water chestnuts
– A little fermented rice.
– 2 tomatoes.
– 3 shallots, chili, turmeric.
– 1 handful of spring onions
– 1 handful of dill.
Seasoning: fish sauce, salt, seasoning powder, cooking oil
Cooking Instructions
Step 1: Prepare the fish and other ingredients
Scale and clean the fresh fish, gut it, and cut it into bite-sized pieces. Marinate the fish with salt and seasoning powder for 15-20 minutes. Peel and slice the Chinese water chestnuts, then soak them in salted water and squeeze out the excess liquid. Peel and finely chop the shallots, or blend them into a paste. Wash the tomatoes and cut them into wedges. Peel and grate the turmeric, then squeeze out the juice. Chop the spring onions and dill.
Step 2: Heat oil in a pan and shallow fry the fish pieces, then set them aside to drain excess oil.
Step 3: In a pot, sauté the shallots, then add just enough water, and season with fish sauce and seasoning powder. Bring it to a boil, then add the tomatoes, turmeric juice, fermented rice, and Chinese water chestnuts. Let it simmer.
Step 4: Add the fish and continue to simmer over low heat until the fish is cooked. Adjust the seasoning to taste and sprinkle with spring onions, dill, and chili according to your preference. Turn off the heat and serve hot. This soup goes well with rice or rice vermicelli.
