Stir-frying squid is a popular dish in many Asian cuisines, and there are different ways to prepare and cut the squid depending on its size. Smaller squid can be simply cleaned and stir-fried whole, while larger squid can be cut into bite-sized pieces before cooking.

However, if you want to achieve the beautiful, flower-like presentation often seen in restaurants, follow these steps to cut the squid in a unique way.

Preparation:

– Large squid tubes, sharp knife.

Instructions:

Clean the squid tubes by removing all the innards, including the quill. Peel off the purple skin to reveal the white flesh underneath. Rinse the squid with diluted salt water, then rinse again with fresh water to ensure it’s completely clean.

Using a sharp knife, cut the squid tube in half lengthwise.

On one half of the squid, make multiple parallel cuts along the width of the squid, about 0.3 cm apart. Cut deep enough to create a slight opening but be careful not to cut all the way through. Continue making these cuts until you reach the end of the squid piece.

Next, on the same side of the squid, tilt your knife to a 30-degree angle and make a slight incision at the corner of the squid piece. Create a slightly deeper cut without severing the squid. Then, make similar cuts parallel to the first one, spacing them about 1 to 1.25 cm apart. Continue making these cuts until you’ve covered the entire surface. (Note: If you don’t want to make diagonal cuts, you can simply make perpendicular cuts to the original cuts.)

Repeat the process with the other half of the squid. For the tentacles, simply trim the eyes, rinse them, and cut them into shorter lengths if they are too long.

Now, cut the scored squid pieces into squares, rectangles, or triangles of your desired size.

Bring a pot of water to a boil and briefly blanch the cut squid for a few seconds. The squid will curl up, and the scored cuts will open up like flower petals. Remove the squid from the boiling water and plunge it into a bowl of cold water to firm up the texture.

Now you can use these beautifully cut squid pieces for stir-fries, salads, or grilled dishes! It’s a simple technique that adds a special touch to your meal.
