1 Ingredients for Pickled Jellyfish with Green Tomatoes and Calamansi
- 500g of jellyfish
- 300g of green tomatoes
- 2 horn peppers
- A few calamansi
- 9-10 cloves of garlic
- 1 cup of calamansi juice
- 1 cup of fish sauce
- Side dishes: Green herbs, green bananas, star fruit, and other fruits of your choice
- Spices: Sugar, salt, fish sauce (preferably nuoc mam nhi), and chili paste
Preparing the jellyfish
Step 2 Prepare the Other Ingredients
Fill a basin with saltwater and add the juice of one lime. Cut the green tomatoes in half and soak them in the saltwater to clean them. Then, remove the tomatoes from the water and let them air dry before storing them in the chiller.
Slice the calamansi into thin, edible pieces, removing the seeds. Cut the horn peppers and garlic cloves into slices, and simply remove the stems from the bird’s eye chilies.

In a pot, combine 2 cups of sugar, 1 cup of nuoc mam nhi, 1/2 cup of water, and 1 cup of chili paste. Stir the mixture and cook over medium heat until the sugar dissolves. Once the sugar is dissolved, turn off the heat and add 1 cup of calamansi juice, stirring to combine. Set the sauce aside to cool.

In a bowl, combine the jellyfish, green tomatoes, calamansi, horn peppers, bird’s eye chilies, garlic, and pickling sauce. Let the ingredients marinate for about 20 minutes before serving.
Note: Only add the pickling sauce once it has completely cooled down.
