Step 1: Prepare the Duck

Rinse the duck with water and use sea salt to scrub its skin to remove any fishy smell. Then, rinse it again thoroughly. Using a sharp knife, make a few shallow cuts on the duck’s skin (without cutting into the meat) to allow the marinade to penetrate deeper. Stuff the duck’s cavity with a mixture of black pepper and white wine, and let it sit for about 10 minutes.

Next, boil a large pot of water and briefly dip the duck into the boiling water for about a minute. Then, immediately plunge it into ice-cold water. This step helps tighten the skin and makes it crispier when roasted.

Step 2: Marinate the Duck
