Ingredients for Grilled Meat

  • Pork (belly, shoulder, or ribs): 1kg
  • Lemongrass: 3 stalks (finely chopped)
  • Garlic: 1 bulb (finely chopped)
  • Shallots: 4 bulbs (finely chopped)
  • Honey: 2 tablespoons
  • Fish sauce: 3 tablespoons
  • Hoisin sauce: 2 tablespoons
  • Vegetable oil: 2 tablespoons
  • Sugar: 2 tablespoons
  • Condensed milk: 1 tablespoon
  • Black pepper: 1 teaspoon
  • Five-spice powder: 1/2 teaspoon
  • Chili powder or fresh chili: 1 teaspoon (adjust to taste)

How to Marinate Meat for Grilling

Step 1: Prepare the ingredients

Rinse the meat and pat it dry with paper towels. Cut the meat into thin, bite-sized pieces (about 0.5-1cm thick) to allow better absorption of the marinade. Finely chop the lemongrass, garlic, and shallots. Alternatively, you can use a food processor to save time.

Step 2: Mix the marinade

In a large bowl, combine the following ingredients: chopped lemongrass, garlic, and shallots; honey, fish sauce, hoisin sauce, vegetable oil, sugar, and condensed milk; black pepper, five-spice powder, and chili (if using). Whisk well to form a smooth paste.

Step 3: Marinate the meat

Place the meat in a bowl and pour the marinade over it. Use your hands to mix well, ensuring that each piece of meat is evenly coated. Cover the bowl tightly with plastic wrap and refrigerate for at least 4-6 hours (preferably overnight) to allow the flavors to penetrate the meat.

Step 4: Grill the meat

Oven grilling: Preheat your oven to 200°C. Place the marinated meat on a wire rack and grill for about 15-20 minutes. Turn the meat halfway through and brush with the marinade to keep it moist.

Charcoal grilling: Place the meat on a pre-soaked wire rack over red-hot charcoal. Turn frequently to ensure even cooking and prevent burning.

Pan-frying: Heat a non-stick pan over medium heat and add a little oil. Pan-fry the meat in batches until golden brown on both sides.

Step 5: Serve and enjoy

Once the meat is grilled to a golden brown and fragrant, transfer it to a serving plate. Serve with rice vermicelli, French bread, or steamed rice, along with fresh herbs, cucumber, and a sweet and sour fish sauce dip.

Tips for Delicious Grilled Meat

  • Choose meat with a bit of fat for a juicier, more tender result.
  • Add a splash of lemon juice to the marinade for a fresh twist.
  • When using a charcoal grill, soak the wire rack in water beforehand to prevent the meat from sticking.
  • We hope you’ll enjoy this delicious grilled meat dish!
