Lentil stir-fried with eggs

Ingredients

– Purple lentils: 300g

– Eggs: 2

– Green onion or leek

– Salt

– Cooking wine

– Soy sauce

Instructions

– First, remove the fibrous ends of the purple lentils and rinse them clean. Then, use a knife to cut them into small pieces.

– Boil water in a pot, add the lentils and blanch for about 2 minutes, then remove and drain. Place them in a bowl.

– Finely chop the green onions and add them to the bowl of lentils. Crack 2 eggs into the bowl, add a little salt, a little cooking wine, and a little soy sauce, then use chopsticks to mix the mixture well. Cooking wine will help eliminate the fishy smell of the eggs.

– Heat oil in a pan, then pour the egg and lentil mixture into it, reduce the heat and stir-fry until the egg is set. Stir-fry for a while until the eggs are firm and the lentils are cooked, then turn off the heat.

Transfer the finished dish to a plate to enjoy with hot rice. The lentil stir-fried with eggs is crispy, flavorful and very delicious.
