Dương xỉ is a type of vegetable that grows abundantly in the mountainous provinces of Vietnam. Not only is dương xỉ delicious and affordable, but it is also rich in nutrients and beneficial for health. This vegetable contains a high amount of protein, fiber, fat, and various amino acids, making it beneficial for cooling the body, reducing gas, nourishing the body, detoxifying, promoting bowel movements, and regulating blood pressure.

With this ingredient, you can showcase your cooking skills by preparing various delicious dishes such as stir-fried, boiled, and soup. Let’s learn how to make crispy fried dương xỉ with an easy recipe below.

1. Ingredients for crispy fried dương xỉ:

– Dương xỉ: 200 grams

– Cornstarch: 100 grams

– All-purpose flour: 100 grams

– Eggs

– Seasonings: Cooking oil, salt, pepper

2. Steps to make crispy fried dương xỉ:

Step 1: Prepare the ingredients

– Take the dương xỉ and wash it thoroughly, then soak it in saltwater for about 10 minutes to remove any remaining dirt. Afterwards, take out the dương xỉ, rinse it several times with clean water, and let it drain.

– Use a knife to cut the dương xỉ into bite-sized pieces, around 4 to 5 cm long.

Step 2: Blanch the dương xỉ

– Place a pot on the stove, add a teaspoon of salt, and bring it to a boil.

– Then, add the dương xỉ to the pot, turn up the heat, and blanch the dương xỉ for about 3 minutes. After that, take out the dương xỉ and soak it in cold water to retain its crispiness, beautiful color, and prevent it from becoming too soft.

Step 3: Prepare the frying batter

– Take a large bowl, add the all-purpose flour, cornstarch, and egg yolk. Season with a little salt, cooking oil, and enough water.

– Stir well with a spoon until you get a smooth batter mixture.

Step 4: Fry the dương xỉ

– Dip the blanched dương xỉ into the bowl of batter, one by one, and get ready to fry.

– Heat a frying pan, add cooking oil, and heat it up. Then, fry the battered dương xỉ until it turns slightly golden, then remove it and set it aside.

– Wait for about 15 minutes until the dương xỉ cools completely, then fry it again for the second time. At this point, the dương xỉ is already cooked from the first fry, so you only need to fry it for about 20 seconds. This way, the dương xỉ will have a crispy, golden crust that is appealing and not burnt or bitter.

The fried dương xỉ will have a golden, crispy outer layer. When eating, you can enjoy the sweet and refreshing taste of the inner part. You can serve the crispy fried dương xỉ with chili sauce or tomato sauce.

3. Notes when cooking crispy fried dương xỉ:

– When buying dương xỉ, you should choose the ones with fewer hairy fibers on the surface and a purple stem. Avoid buying ones with too many fibers and a green stem, as they may be old and fibrous.

– Since dương xỉ contains some substances that are not good for health, it is recommended to blanch the vegetable before cooking to remove these substances.

– When preparing the frying batter, it is not advisable to add egg yolk as it may make the batter soft quickly and cause the dương xỉ to lose its crispiness.

– Although dương xỉ is delicious and nutritious, it is not recommended to consume too much as it contains protopernin, a harmful substance if accumulated in the body.

– Avoid eating dương xỉ together with foods rich in vitamin B1 such as soybeans, peanuts, as the enzymes in the vegetable may destroy vitamin B1 in those ingredients.
