Beef and vegetable salad
Ingredients
– Beef: 500g
– Water spinach: 60g

Instructions
– First, clean the beef with salt or ginger wine to remove the odor. Then wrap it tightly with a thread. Add ginger, lemongrass, and the beef, season with a little broth powder, boil for about 25 – 30 minutes until tender.
– When the beef is tender, remove it to cool, then soak it for about 15 minutes. Soak the dried water spinach in warm water for about 30 minutes, then rinse and cut into bite-sized pieces. Clean the garlic, chili peppers, ginger, carrot,…
– Prepare a mixture of vinegar, sugar and fish sauce in the ratio of 1 sugar, 1 fish sauce, 1 vinegar, 4 filtered water and boil, stirring until all the spices dissolve.
– Wait for the mixture to cool, then add the beef, water spinach, carrot, cucumber, chili peppers, and garlic, all thinly sliced, mix well and pour the seasoning mixture until everything is submerged. Then refrigerate for about 1 day before serving.
Water spinach salad
Ingredients
– Shrimp: 200g
– Dried water spinach: 100g
– Carrot: 1
– Yellow and red bell peppers, chili peppers

– Condiments: salt, sugar, pepper, fish sauce, vinegar,…
Instructions
– Soak the dried water spinach for about 3 – 4 hours for it to expand, then rinse and cut into bite-sized pieces. Soak the water spinach in a bowl of water with the juice of a fresh lime for about 15 minutes, then remove and drain it.
– Clean the shrimp and marinate with 1 teaspoon fish sauce, ½ teaspoon ground pepper. Boil in boiling water for about 5 minutes with lemongrass to get a nice color and remove the fishy smell.
– Peel and clean the carrot, slice it and soak in a mixture of vinegar and sugar to make it crispy. Rinse the bell peppers and cut into thin strips. If you want them to be crunchier, soak them in ice water.
– Make the salad dressing by adding 2 tablespoons fish sauce, salt, and 2 tablespoons filtered water to a saucepan, heat and stir until everything is dissolved, then turn off the heat. When it is cool, add 2 tablespoons of lime juice and finely chopped chili peppers.
Mix all the ingredients together with the shrimp, then slowly pour the dressing over it, season to taste and sprinkle with peanuts, fried shallots, and herbs. It can be eaten with rice or served with shrimp crackers, very delicious.
