The simple 8-step recipe for cooking dried bamboo shoots with pork trotters is as follows.

Prepare the ingredients:

Dried bamboo shoots: 500g (can choose bamboo leaves, bamboo tongues, etc.)

Pork trotters: 1 piece

Bones: 300g

Spices, salt, fish sauce, scallions.

Tips for choosing delicious bamboo shoots: It is recommended to choose bamboo shoots that are slightly brownish yellow, cut into small pieces, and have not been salted. If you buy large pieces of bamboo shoots, the soaking and boiling time will be longer. Pure bamboo shoots should still retain the characteristic aroma of fresh bamboo.

Step-by-step instructions:

Step 1: Rinse the dried bamboo shoots with water, then soak them overnight until they expand completely. You can soak them for 2-3 nights, changing the water daily. On the first day, you can use rice washing water to help the bamboo shoots become whiter and tastier, and use regular water for the remaining days.

Step 2: After soaking, put the bamboo shoots in a pot of boiling water and blanch them several times until they are completely tender and the boiling water becomes white. Let the pot of bamboo shoots boil for at least one hour over medium heat.

Step 3: Take out the boiled bamboo shoots and soak them in cold water to enhance their crispness. Then tear or cut them into small pieces according to your preference.

Step 4: Stir-fry the bamboo shoots with a little salt and fish sauce to absorb the flavors. Use low heat to ensure even cooking of the bamboo shoots.

Step 5: Rub salt on the pork trotters and bones, rinse them thoroughly, and put them in a pot of boiling water to remove any impurities. Then rinse them again to clean.

Step 6: Add the trotters and bones to the pot, add cold water, and simmer for about 30 minutes. Skim off any foam that appears to keep the broth clear.

Step 7: Add the stir-fried bamboo shoots to the simmering broth, then simmer until the bamboo shoots are tender and the pork trotters are cooked.

Step 8: Taste the broth again to check the flavor. Add scallions, turn off the heat, and serve the soup in bowls for a delicious meal.
