Preparation:
1 duck weighing about 1kg – 2kg, plucked and salted, rinsed with lime or vinegar to remove any smell.
1 can of any type of beer.
Seasonings: Green onion heads, a few pieces of lemongrass, 1 piece of ginger, 1 star anise, 3 teaspoons of brown sugar, 2 cinnamon leaves,
Cooking oil, seasoning powder…
Instructions:
Step 1: First, wash the duck meat thoroughly and cut it into square or rectangular pieces that fit your mouth.
Step 2: Put the duck meat in boiling water and blanch for 2 minutes, then remove and drain the water until the duck meat is completely dry.
Step 3: Put a little cooking oil in a pan, then add all of the seasonings, stir until the sugar melts and turns slightly brownish red, then add the duck and stir to let the meat absorb all the delicious seasonings.
Step 4: Reduce the heat, stir-fry until the duck meat is golden brown on all sides, then add the beer and season with a little soy sauce. Stop when the taste suits your preferences. Then cover it, simmer until the meat is cooked and the broth thickens, and turn off the heat.
Step 5: Finally, transfer the braised duck to a dish, sprinkle with finely chopped green onion, and enjoy. This braised duck dish is not only tender and delicious, but also fragrant and free from any unpleasant smells that everyone will love.
