How to Store Broken Eggs

When dealing with broken eggs, your best option to move forward is to wait until you need to use them in a dish.

While it’s common to store broken eggs in the fridge, this only works for a short period. A better alternative is to properly freeze them, which can prolong their shelf life without losing their nutritional value.

Freezing broken eggs gives you peace of mind, knowing that they’re safely stored for longer. However, it’s important to pay attention to the process of freezing and thawing both the egg whites and yolks.

Egg Whites

The simplest way to freeze egg whites is to place them in an ice cube tray and put the tray in the freezer. Once they’re completely frozen, transfer the cubes into a ziplock bag for easier storage.

For thawing, it’s best to place the cubes in the fridge overnight and then let them sit at room temperature for 30 minutes before use to ensure complete thawing and reduce chill.

Egg Yolks

Egg yolks tend to become gelatinous when frozen, disrupting the structure of the egg. To prevent this, mix in a pinch of salt or 1/3 teaspoon of sugar per yolk. This will keep the protein in the yolk from thickening and prevent it from becoming gelatinous.

After mixing, simply follow the same process as freezing and thawing egg whites.

Additional notes: Freezing is the best way to store broken eggs. Remember to separate the whites and yolks before freezing. Frozen and thawed eggs can be used for baking or cooking just like fresh eggs.
