Marinate the sauce into the meat, and rub the skin with salt and lime.
Ingredients:
– 1 kg pork belly; lime, rock salt or table salt
– Sauce to marinate the meat: 2 tablespoons minced garlic, 2 tablespoons minced shallots, 1 tablespoon olive oil, 1/2 teaspoon salt (or 1 teaspoon soup powder), 1/2 teaspoon pepper, 1/2 teaspoon chicken stock powder, 1/2 small pack of five-spice powder. Peel the garlic and shallots, then put them together with the spices into a blender and blend until smooth.

Step 1: Wash the meat thoroughly and let it dry. Pat the meat with a paper towel to make it completely dry. Place the meat with the meat side up, then spread the sauce over the entire surface of the meat, including the edges. Absolutely avoid getting the sauce on the skin.
Step 2: Flip the meat so that the skin is facing up. Use a paper towel to wipe the skin clean. Rub salt thoroughly on the surface of the skin to let it absorb the salt, then wipe off any excess salt on top.
