Thawing meat: Quick and safe methods to preserve freshness and taste

Many families these days store meat and fish in their freezer to save time on grocery shopping. However, thawing a chunk of meat can be a time-consuming task. Leaving it to defrost slowly in the fridge can take a whole day, and letting it sit out at room temperature is unsafe. Even soaking it in water isn’t the quickest method.

To quickly and safely defrost meat while preserving its freshness and taste, try these methods below.

Salt-water method

Prepare a basin of water (enough to submerge the meat). Add 2 tablespoons of salt and stir well. Soak the meat in this saltwater solution. After about 10 minutes, you’ll feel the meat softening.

You don’t need to wait until the meat is completely soft. It’s ready when it’s slightly softened but still a bit firm. This texture makes it easier to slice the meat thinly and neatly.

If you prefer your meat softer, cut it into halves and soak it in the saltwater solution for a few more minutes.

White vinegar method

To preserve the freshness and quicken the thawing process, try using white vinegar. Soak the meat in a basin of water mixed with white vinegar for about 5-10 minutes. The acetic acid in vinegar lowers the freezing point of water, accelerating the defrosting process.

You can combine salt and white vinegar for even faster results.

Sugar-water method

Mix warm water at about 40 degrees Celsius (a ratio of 1:5 hot to cold water) with 2 tablespoons of sugar. Soak the frozen meat in this solution. The sugar molecules will hasten the melting of ice crystals in the meat. In just 7-10 minutes, your meat will be ready for cooking.

Ginger method

Adding ginger to the water helps maintain the meat’s natural red color and enhances its flavor.

Prepare a basin of warm water at about 40 degrees Celsius. Crush a small piece of ginger and add it to the water. Soak the meat in this ginger-infused water. Ginger has a warming effect, which speeds up the thawing process.

Remember, when you buy meat in bulk, divide it into portions sufficient for a single meal. This way, you only thaw what you need for each cooking session. Never refreeze partially thawed meat, as it compromises its quality, texture, and safety.
