Select and prepare onions

Fry onions

Using a small pot to fry onions will save more cooking oil than using a pan. Pay attention to waiting for the pot to be very hot before pouring cooking oil in.

When the oil is hot, pour in the onions and fry, occasionally using chopsticks to stir gently until the onions are golden brown. You should use a small fire in the kitchen, do not turn on a high heat as the onions will burn quickly.

When the onions turn light yellow, immediately lift the pot off the stove and turn off the heat. Use chopsticks to stir the onions in the pot until they are golden brown a little more. If you wait until the onions are really golden and then turn off the stove, the onions will be dark yellow and when eaten. will be bitter. This step is the most important step in determining the deliciousness of fried onions.

Finally, add ½ teaspoon of sugar to the pot of hot fried onions, use chopsticks to stir well, then take the onions out and place them on an aluminum basket to keep them crispy for a long time, and let the cooking oil drip into the bowl. I often keep the oil in which the onions were fried, because when cooking fried sticky rice or corn sticky rice, sprinkled with 1 teaspoon of cooking oil will create sticky rice that is both fragrant and fatty. When dry and cool, the onions will be crispy, store them in a sealed jar and keep them in the refrigerator to eat gradually.
