Step 1 Soak the seaweed
For the dried seaweed you bought, rinse thoroughly with water several times. Then, soak the seaweed in cold water for about 4 – 6 hours. After soaking, rinse again about 1, 2 times more to remove any sand from the seaweed.

Put a pot of water on the stove, and add 2 liters of water. Boil the seaweed over high heat, then squeeze in 1 lemon. Boil for about 20 – 30 minutes until the seaweed is soft and almost completely dissolved, then turn off the heat.

Step 3 Strain the seaweed dewdrop
Strain the dewdrop water with a sieve or cheesecloth to remove any dirt and undissolved seaweed from the water. Let the bowl of seaweed water cool down, then put it in the refrigerator for about 1 hour until the dewdrop is completely congealed.

Step 4 Cook the ginger syrup
Peel the ginger, wash it, and slice it thinly. Put in a pot 100g sugar, half of the ginger, and 70ml water. Stir while boiling until the sugar dissolves completely. When the syrup turns brown, add 100ml of filtered water, the remaining ginger, stir well and turn off the heat.

When the dewdrop has congealed, remove it from the mold, cut it into bite-sized pieces. Put the dewdrop in a glass, add ginger syrup and ice. You now have a glass of cool, crispy dewdrop with a sweet ginger flavor.
