- 500g sugar
- A pinch of vanilla
- A pinch of salt
Ingredients for Cóc Syrup
Pro Tip: How to choose the best cóc fruit: Opt for fruits that are not too big or too small; the best ones are usually around 1.5 to 2 hand lengths long. Look for those with dark green, smooth, and bump-free skins, as these tend to be crisp, less sour, and sweeter.
2 How to Make Cóc Syrup
Step 1 Prepare the Cóc
Preparing the Cóc
After purchasing your cóc fruit, give it a quick rinse under running water. Then, peel the fruit and soak it in salted water for 5-10 minutes to remove any residual sap.
Once the soaking is done, rinse the fruit again and prick the flesh with a fork. Place the prepared cóc in the freezer overnight.
Step 2 Marinate the Cóc in Sugar
Marinating the Cóc in Sugar
Take the cóc out of the freezer and let it thaw. Squeeze out the excess water and place the fruit in a bowl.
Add 500g of sugar and a pinch of salt to the bowl and mix well. Let the fruit marinate for 2-3 hours to absorb the sugar.
Pro Tip: To speed up the marinating process, cover the bowl with plastic wrap or a fine cloth and leave it in direct sunlight. This method will reduce the marinating time to just one hour.
Step 3 Cook the Cóc Syrup

Place the marinated cóc in a pan and cook over high heat until it comes to a boil. Then, reduce the heat to low and simmer for 45 minutes to an hour, or until the fruit turns red and the sugar syrup thickens. At this point, add 900ml of water and continue cooking for about 10 more minutes before turning off the heat.
Finally, add a few drops of vanilla to the pan and let the syrup cool down. Once cooled, transfer the syrup to a glass jar and store it in the refrigerator.
