Duck meat is an incredibly nutritious type of protein. In 100g of duck meat, you’ll find approximately 25g of protein, which is an impressive amount compared to other types of meat like beef, pork, goat, fish, or even eggs.

This makes it an excellent food choice for those looking to increase their protein intake, such as athletes or health enthusiasts.

In addition to its high protein content, duck meat is also rich in other nutrients such as calcium, phosphorus, iron, and vitamins B1, B2, A, D, and E, as well as nicotinic acid. These nutrients play a crucial role in maintaining and improving overall health.

With its nutritional profile, duck meat can be used to prepare a variety of delicious dishes. We would like to introduce a recipe for duck cooked in fermented bean curd or “vit nau chao” as follows:

Ingredients for Duck Cooked in Fermented Bean Curd

– 1 duck

– Wax yam (khoai môn sáp)

– Ngò gai (a type of herb), water spinach (rau muống), and mushrooms

– Fresh coconut water

– Seasonings: fermented bean curd (chao), salt, seasoning powder, cooking oil, rock sugar (đường phèn), and sate (a spicy paste)

– Rice vermicelli (bún)

How to Cook Duck in Fermented Bean Curd

Duck Cooked in Fermented Bean Curd

– Cut the duck into bite-sized pieces and rinse them. Marinate the duck pieces with 2 jars of fermented bean curd, cooking oil, seasoning powder, sugar, salt, and sate for 2-3 hours to absorb the flavors.

– Cut the wax yam into square pieces and fry them until slightly golden.

– Sauté garlic and shallots in a pressure cooker on the Sauté setting. Add the marinated duck and cook until it changes color.

– Pour in the coconut water and simmer for 20 minutes. Then, add the fried yam. Bring it to a boil for another 15 minutes until the yam is soft, and season to taste. Sprinkle with chopped ngò gai.

– For the dipping sauce: mix half a jar of fermented bean curd, 2 teaspoons of shrimp sate, 2 tablespoons of water, and 2 tablespoons of sugar. Heat the mixture until it thickens. Alternatively, crush garlic and chili with sugar and mix with fermented bean curd for a delicious dip.

– This dish is served with rice vermicelli and vegetables.
