Place the marinated mudskipper fish into the pan and simmer over low heat for a few minutes to let the fish absorb the flavors. Add just enough water to barely cover the fish, and continue braising for about 15-20 minutes. Then, flip the fish and turn off the heat.

Let the dish cool down for about 30 minutes, then add a little warm water and braise the fish for the second time. This technique helps the fish meat to firm up and enhances its flavor.
