Preserving Shiitake Mushrooms
Shiitake mushrooms are not too difficult to keep fresh. Simply use a damp cloth to wipe down the mushrooms and then arrange them in a paper towel. Preserving Enoki Mushrooms
Enoki mushrooms are easy to preserve. They can be stored at a temperature of 1-5 degrees Celsius for up to 45 days. At room temperature, depending on the climate, they will stay fresh for 1-3 days.
When storing Enoki mushrooms, it’s a good idea to line the container with absorbent paper and change it regularly to prevent the mushrooms from getting soggy.
However, since Enoki mushrooms are inexpensive and readily available, there’s no need to store them for extended periods. It’s best to use them soon after purchase and restock as needed.
Preserving Oyster Mushrooms
To preserve oyster mushrooms, start by separating the individual mushrooms. Blanch them for about 15 seconds in boiling water with a pinch of salt, and then drain and pat them dry. Place the mushrooms in a container, seal it tightly, and store them in the freezer. This method will keep the mushrooms fresh for up to 30 days.
Preserving Straw Mushrooms
Straw mushrooms are a bit tricky to preserve. One method is to use vacuum-sealed bags and then store them in the refrigerator. Alternatively, you can blanch them for about 2 minutes in boiling water, cool them in ice water, and then store them in the refrigerator along with the blanching water. This will keep them fresh for 3-4 days.
Preserving Termite Mushrooms
Termite mushrooms have a delightful flavor and are quite rare, as they only grow where termites build their nests. To preserve these mushrooms, remove any buds, roots, or damaged parts. Do not wash the mushrooms; instead, use a clean knife to trim away any soil or damaged bits.
Place the cleaned mushrooms in a sealed container with a paper towel to absorb any excess moisture and store them in the refrigerator. This method will keep them fresh for 3-5 days.
