Tip: To choose fresh and tasty octopus, look for clear and bright eyes. Avoid dull or cloudy eyes, as this indicates that the octopus is not fresh. Fresh octopus has natural coloring, neither too dark nor too light.
2 How to Make Stir-fried Octopus with Assorted Vegetables
Step 1 Prepare the Octopus
Prepare a bowl of diluted saltwater and soak the octopus for about 5 minutes. Remove the octopus and add some crushed ginger and a splash of white wine. Rub the ginger onto the octopus and then rinse with clean water.

In a pot, bring 1 liter of water with some crushed ginger to a boil. When the water is hot, add the octopus and blanch for about 2 minutes, then remove and set aside to drain. Cut the octopus into small, bite-sized pieces.

In a bowl, mix the octopus with 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of ground pepper. Mix well and marinate for about 10 minutes to let the octopus absorb the flavors.

Step 4 Stir-fry the Octopus
Heat 2 tablespoons of oil in a pan. When the oil is hot, add the garlic and fry until fragrant. Add the marinated octopus and stir-fry over high heat until the octopus is cooked and slightly charred.

Next, add the pineapple, cucumber, and cherry tomatoes and stir-fry together. Pour in half a cup of water, then season with 1 teaspoon of seasoning powder, 1 teaspoon of sugar, and 1 teaspoon of dark soy sauce.
Stir-fry for about 2 minutes, then taste and adjust the seasoning as needed. Finally, add the onion, celery, and a sprinkle of ground pepper, then turn off the heat.
Tip: Avoid overcooking the pineapple and cucumber to retain their natural crispness.
