You can easily make your own fermented rice paddy at home by feeding it with fresh rice every 3-5 days, approximately 1/3 of a cup. Use soft, mushy rice or mix it with rice water for best results.

2How to Make Octopus in Fermented Rice Paddy Dip

Step 1 Prepare the Ingredients

First, to remove the slime and fishy smell from the octopus, rub it with a mixture of ginger, salt, and vinegar, then rinse thoroughly with water several times.
Tip: It’s easier to prepare live octopus if you chill it in the freezer for 2 hours before handling.
Clean the vegetables: remove any damaged or wilted leaves from Piper sarmentosum, Limnophila aromatica, Limnophila rugosa, coriander, and water spinach. Soak the banana blossom in diluted salt water for 5 minutes to prevent discoloration, then rinse it clean.
Peel and mince the garlic. Peel and slice the shallots. Grate one part of the lemongrass and cut the remaining into 1-inch segments. Peel and cut the onion into wedges. Rinse the chili.
Mix 4 tablespoons of fermented rice paddy with 100ml of warm water, then strain the mixture to obtain the fermented rice paddy juice.

Heat a pot on the stove and add 2 tablespoons of cooking oil. Once the oil is hot, add the lemongrass, onion, and garlic. Sauté until fragrant. Then, add the onion, chili, and seasonings: 1 teaspoon of seasoning powder, 1 teaspoon of salt, 1/2 tablespoon of sugar, and 1/2 teaspoon of monosodium glutamate. Stir well.
Next, pour in the fermented rice paddy juice and 350ml of water. Bring the mixture to a boil. Once it boils, skim off the tiny bubbles that form on the surface and adjust the seasoning to your taste. Finally, add the octopus and vegetables, and your dish is ready!
